Mushroom Tavolata at FoodLabs Zurich - Alumni Special

The FoodLab 2024, initiated by the AVINA Foundation and organized by Soil to Soul and nutrition researcher Dominik Flammer, will take place from October 8 to November 3, 2024, in Zurich. Building on the success of the MushRoom Pre-Lab 2023, the FoodLab offers an innovative platform to explore and shape the future of food with young, talented chefs. The focus is on developing sustainable culinary concepts and promoting the diversity of nutrition by exploring creative alternatives and new preparation techniques using offal, legumes, and mushrooms. Over four weeks, recipes and ideas will be developed, and the participants will be treated to various pop-up dinners.

Mushroom Tavolata

This Mushroom Tavolata is dedicated exclusively to local wild and cultivated mushrooms, which we will combine with legumes and offal. The talented young chefs will prepare exciting recipes with wild mushrooms such as parasol, saffron milk cap, or honey fungus, as well as cultivated mushrooms like lemon oyster mushrooms or lion’s mane – just to name a few examples. The fact that some legumes will be involved and that mushrooms and offal can also be turned into a dish like "Beuschel" (a traditional offal stew) is just one of the many exciting surprises of these versatile Mushroom Tavolatas. A kind of autumnal “Waldmetzgete” (forest butcher feast)!

For conceptual reasons, it is not possible to offer vegetarian or vegan options for this event.
